I had the opposite happen. I did the quests for the first 2 or 3 days and got bored of it. I checked back yesterday and the weekly reward was in my inventory. I'm not complaining lol
Happened to me last week. I was 6/7 and it reset by itself. Hasnt happened again yet but l wouldnt be surprised if it did.

I had 2/7 done towards a prize and had it reset on me after not missing any days/tasks today. Not complaining as the new prize is better compared to a cheaper food item, but we will see if it changes again or not.
Probably my own fault though as I haven't been refreshing or anything to double check before navigating away.

There's a timer counting down which means you have to complete the daily tasks before it finishes. That could be why it reset on you.

This happened to me a few times last week, but it just kept resetting my weekly progress and not changing my weekly reward. It was so funky lol

Happened to me the other day. Reset at 6/7 of a Draik Transmog Potion. Was a little miffed but it did reset to a Kad, so I suppose there was a bright side to it. I was considering opening a ticket for it but I think I'd rather have the Kad than the potion honestly. Just hoping my progress doesn't mess up again. I have noticed sometimes on mobile, if I don't visit the quest page before starting some of the stuff, the progress wont count. Like if I spun the wheel of excitement before visiting the quest page and its on there, it occasionally wont give me the check mark for it and I'll have to wait to try the wheel again to clear it off.
