Okay so honestly I had my date wrong this whole time until the other day I was looking back and the ub thread from when they were released and realized mine hatched earlier than I thought, so if you posted there when yours hatched that's possible, otherwise there's not really a way to see.

I legit just waded through a LOT of pages in the userbar topic. And I found it. My Ryu’s birthday is Nov 18 2020!

Also, something I find interesting is that normally when I evolve my luck goes down by at least 2 stars, and I figured it would be more because I've had babysitting off and haven't done any babysitting runs in a while, but this time I only went down by 1 star.
