Daisy is a big flower, and unlocked the sunset paint. Love it!

Ryugi is now a big plant too and unlocked candy stripe paint can.

Piper became a phoenix and I unlocked the lime paint!
Still waiting for the pumpkin background and candy corn paint - hopefully I'll unlock those soon

Yamaha evolved and turned white! It looks... So blended in with my background. I'm not sure if i'm gonna change the BG or my paint. Hmm

Yay I got the fish branch! I also unlocked the rainbow paint! Whoo hoo! Still not halloween scene yet but hoping now I have my fish I can unlock the underwater one!

The spooky backgrounds are not linked to evos they are linked to interacting with your own Ryu. In regards to the paint can I cannot answer that. Maybe it isn't a given you will get one with every evolution? Or you need to have certain heart level? That I think is still unknown.
