Once we hit Stage 3 Ryu, we either just stay here and keep our Ryu at Stage 3, or we reroll for another Ryu to gather the other Ryu scenes?

It depends on what you want. If you turn evolutions off you will keep 3rd stage.

If you keep evolutions on then your Ryu will hop to start a new branch from 1st stage. I would recommend completing different lines for gathering the scenes plus you can unlock the visitor perk. At the end you can always trade back whenever you decide to settle.

But if you don't care about scenes you can just go after the brach you like more and stay with that

Got it! Originally I wanted a Fox and get all the way to Stage 3, which I got lucky and on my first reroll got Fox and after the past few months, reached Stage 3.
Now that I'm here, I feel like I'm missing out on a lot if I don't reroll/let my Ryu jump branches. As you said, I could always trade back when I do decide to settle, so that definitely helps! ^^

I was on the same boat too and I'm sure many users too haha.

My first Ryu was a fishie and I fell in love with my whale. After going through different branches I'm happy to be able to see different animations, right now I probably will settle with a little fox after my hunting is done. In the meantime let's have fun
