I'm not sure if visual novels get a pass within the video game context, but I'm really big on the soundtracks for the VNs The House in Fata Morgana and Umineko.
Big fan when traditionally gothic instruments meet EDM.
guilty.... Age of Empires Age of Kings...... my friends who frequented my dorm where I lived on this game can actually humm the sound of the entire track
I've played Okami so many times it'd be hard not to choose one from it; some of my favorites are Waka's theme, Oki's Theme, Himiko's Sorrow and Mr. Orange's theme, Battle of the Twin Demons (the very beginning of the song is PERFECT, the clock going back effect checks all the boxes for me); but I'd say this one is my absolute favorite:
I often use Okami songs to study, they are very relaxing and help me focus, hopefully this can help someone else with the same need for calming songs to study, haha!
The Ori & The Blind Forest soundtrack is *chef's kiss*
I haven't played the second one, but if it's half as good as the first one I'll be happy.

Everyone's already posted so many good ones, but one of my favorite lesser-known games is Rule of Rose! It's an old PS2 horror game with godawful controls, but a fantastic story and the soundtrack is just as lovely.
The strings really set the tone of the game, and I love the juxtaposition between how elegant & classy the strings can sound, while also building tension like nothing else:
This song kinda goes through a few different moods as it plays over the start screen page's cutscene, but it's super lovely!

I seem to be stuck in a kingdom heart songs loop for like the last hour (even though I haven't played a single game ) but I do remember this song vividly throughout growing up.
Still the best bgm for me. All those grinding in ant tunnel and ellinia tree dungeons.

There are genuinely so many soundtracks / tracks I would put on this list because I've listened to a ton of them! But let's start with two of my faves!
The Stardew Valley OST (lol of course)
Distant Banjo - Eric Barone
and the Skyrim OST!
One They Fear - Jeremy Soule
I linked two of my favorite tracks.
I also like the more atmospherical ambient game stuff, like this Skyrim track:

In my limited gaming experience I would have to say the Halo soundtracks for sure and from my childhood any water level in Donkey Kong. The music was so soothing which helped to reduce my anxiety for playing any sort of water level. Lol strange anxiety I know!
