Never dealt with these before but I know some sellers here have.
Are they safe to accept? Is it possible for the seller to recover it, cancel the card, or anything like that?
Also, would anybody here be interested in exchanging PayPal USD for large Amazon Cards? At a lesser rate of course.

When you get an amazon gift card, you get the code to the gift card. From there you just apply it to your accounts gift card balance. Once you do that, it's done, there's no CB or anything like that. Once you apply it, it's in your account and you can't even transfer it to other accounts.

@(you need an account to see links) - I know I'm a little bit late here, but thought you could use some of my "knowledge" of trading Amazon Gift Card's on /r/gcx
If the seller does not send it to your email, there is a chance of recovery, which would just be done by either calling Amazon or using their Live Chat and saying the card was stolen, so if you're going to be receiving payments as Amazon Gift Card, ALWAYS tell them to send it to your e-mail, if they only give you a claim code, it's riskier.
After dealing, make sure you've stored the claim code somewhere safe, so if you ever need to recover the balance (needs to be intact) you can just provide them the claim code and they will reactivate the gift card and you'll be able to sell it.
You can also request the gift card to be transferred, it's way easier if you have the claim code, if you don't, you'll be forwarded to a 'specialist team' and they will open up an investigation (depends on the rep you get) and it's going to be a pain.
Also, for selling Amazon Gift Cards, the usual rate at /r/gcx is 80% of the value of it.
