Help with setting up a server for an app that's already made

I play apps like Kung Fu Pets, Fantasy Forest Story, Dragon City etc. and since a hack for them is not possible since they're server sided I would like to get my own server and tell these games to connect to them so I can have whatever I want on the games. How do I do something like this? Is there any detailed tutorials about something like this being done? Thanks for reading and/or answering!
